I like folding in chunky ingredients during the second coil fold, as the dough has fully formed gluten at that point, but still has enough slack to be folded many times over. In the hind sight, though, sage would have been easier to mix in at the beginning with dry ingredients. Live and learn. The loaf came out beautifully fragrant with sophisticated flavors.
